- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp sugar (to balance acidity)
- 4 cups fresh or canned tomatoes
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream (optional, for creaminess)
- Fresh basil, salt, and pepper for garnishing
Instructions
- Grilled Cheese:
- Butter one side of each bread slice. Place cheese between the unbuttered sides and close the sandwiches with the buttered sides out.
- Heat a skillet over medium heat and grill the sandwiches for about 3-4 minutes on each side, until golden brown and the cheese is melted.
- Tomato Soup:
- Heat olive oil in a pot over medium heat. Add onion and garlic, cooking until soft.
- Add tomatoes and broth, bring to a simmer. Add sugar, salt, and pepper.
- Simmer for 20 minutes, then blend until smooth with an immersion blender.
- Stir in cream if using, heat through. Serve garnished with fresh basil.
